My fan is not coming on when the car is hot (87 Sammy Tin Top)  I have check the fan independantly and it works fine.  All fuses are OK.

So, is there a Thermostat that has malfunctioned?   Where would this be or any ideas?

Are you talking about the electric fan in front of the radiator? If so, that's the air conditioner booster fan.
It comes on with the AC and is controlled (IIRC) by a little round relay under the junk tray.

The stock radiator cooling fan is engine driven with a fluid fan clutch.

Stock rad fan clutches have a history of failing.  The fan should turn with mild resistance with the engine off.  The fan clutch is filled with silicone oil.   When the seal starts to leak , the clutch will stop working.  If you have oil or oily dust all around the front of your fan clutch, it is likely leaking.

mine manual was acting up so I just replaced it with a large pusher electric, had to tilt the rad and install it, it looks nice and I am hoping it helps alot on the trail. it covers the entire radiator top to bottum and side to side. running it off of a toggle with a relay, it is a hayden I got from the parts store for around 100 hope is works out for me as it is to late to turn back now. If you get an electric fan, get a puller instead of a pusher.  It's more efficient that way. However, you have to make sure that it fits.  Remember too that it sucks pretty hard on your alt.  I would think twice if I had a stock alt.

I normally prefer a puller anyway, but when they quoted the deminsions they failed to mension that was not at its widest spot, and since I got a little greedy with the size it would not work as a puller, as far as altinator, it is on my list, it is supposed to pull like 12 or 13 amps so we will see, I have a big optima it will keep it turning for a while, I also just redid my power steering and put a cooler in for it also so I needed more air movement to keep everything happy.

OK, now that makes sense,  Thanks.  I just got the rig so I'm a little new at the Sammy's in's and out's.
But while were on the subject..................

What type of Refrigerant oil does the Air Conditioner take.  I don't see a tag and it's not in the owners manual.  I suppose it's the old type I can't do myself?

The refrigerant would be R-12, I believe.

As to the oil, I presume a standard, sulpher based refrigeration oil, but I doubt you really meant the oil in the compressor.
